the recipe of indian style pasta masala is completely open ended and can be experimented with choice of veggies and sauces. for example the masala pasta recipe can be prepared with veggies like carrots, beans, peas, broccoli, snow pea and even sliced mushrooms. in addition with respect to sauces, indian style pasta can take plain tomato sauce, hot and sweet tomato ketchup, and even any choice of mayo recipes. i personally like the combination of mayo and plain tomato sauce which makes it tangy and creamy. i even sometime add chilli sauce to make it tangy and spicy combination masala pastarecipe. finally coming to spices, i have added red chilli powder, garam masala and some turmeric. it can be further extended with dry spices like cinnamon and bay leafs for more flavours.

while the recipe for masala pasta recipe is extremely simple, yet i would like to share some tips and recommendations for a perfect spicy indian pasta recipes. firstly, use pasta of your choice like penne, macaroni, farfalle, pipe or spaghetti. also i prefer to add tomato pulp, however you can also use canned tomato pulp or red pasta sauce. finally, adjust the amount of chilli powder depending on spice level. skip the chilli powder if serving for kids.

Ingredients (1 cup = 250 ML)
for pasta cooking:
  • 1 cup penne pasta or any pasta
  • water to boil
  • ½ tsp salt
other ingredients:
  • 1 tsp oil
  • 1 tsp butter
  • 2 clove garlic finely chopped
  • 1 inch ginger finely chopped
  • ½ onion finely chopped
  • 1 cup tomato pulp
  • ¼ tsp turmeric / haldi
  • ½ tsp kashmiri red chilli powder
  • 2 tbsp tomato sauce
  • ½ tsp garam masala
  • ½ tsp salt
  • 2 tbsp corn
  • ¼ capsicum finely chopped
  • ¼ carrot finely chopped
  • 2 tbsp peas / matar
  • 7 florets broccoli
  • 3 tbsp water
  • ½ tsp mixed herbs basil, marjoram, oregano, rosemary, sage, thyme
  1. firstly, saute 1 inch ginger and 2 clove garlic in 1 tsp oil and 1 tsp butter.
  2. further saute ½ onion till they turn soft.
  3. additionally add 1 cup tomato pulp and saute well.
  4. keep stirring till the tomato pulp thickens.
  5. now add ¼ tsp turmeric, ½ tsp chilli powder, ½ tsp garam masala and ½ tsp salt.
  6. saute till the spices gets cooked completely.
  7. now add 2 tbsp corn, ¼ capsicum, ¼ carrot, 2 tbsp peas and 7 florets broccoli. saute for a minute.
  8. add in 3 tbsp water and mix well.
  9. cover and simmer for 5 minutes.
  10. now add in 2 tbsp tomato sauce and ½ tsp mixed herbs. mix well.
  11. add in cooked pasta and mix gently till the sauce gets coated well.
  12. finally, serve masala pasta indian style hot topped with cheese if required.
